There are a number of reasons to store meat in bulk for an extended period of time. It could be to get you through storm season, or maybe you just always want to have a hefty supply of protein on standby for you and your family. Regardless of the reason, doing it the right way is necessary for your health and the quality of the meat once you’re ready to eat it. 


Meat Storage requires a freezer temperature between 28°F to 32°F. The closer the temperature creeps towards 40°F the more the meat begins to breakdown (regardless of meat type). At 50°F rapid bacterial growth sets in. By following the recommendations outlined in this article, you can ensure a safe product that will last for months and even years.

Meat Storage Deep Freezer

Deep Freezer

If you have the extra money along with some extra space (preferably a basement where it’s cooler), then buying a deep freezer.  It’s surely a great investment. You will have no shortage of room for all of your frugal finds.  My deep freezer changed my life in so many ways, from the room and mess it saves in my kitchen refrigerator, to the options it provides for bulk, long-term meat stowing.  This is the model I own and I personally, and professionally, recommend it to anyone interested.   


Kitchen Freezer  

If a deep freezer isn’t an option for you, there is always your kitchen freezer.  Now all you need to do is ensure a nice, clean, open space for your meat storage needs.  Before you write it off as not having enough space, think about the many items currently living in your freezer that could easily be trashed.  Not only will this be a great move for the sake of saving money and increasing your on hand meat supply, but also a nice cleansing that goes far beyond meat storage itself!

This is a very effective method of meat storage if you plan to use within six months.  Any longer I highly recommend using the vacuum sealer method (see below).  Different types of meat handle being frozen differently based on their composition, and that should be taken into consideration. I have taken the liberty of assembling a chart below to assist you with that.  Freezer bags come in all shapes and sizes, perfect for the various needs that you may have.

Vacuum Sealer

Vacuum sealing isn’t required for effective meat storage, however, it can make a huge difference in the amount of time meat can be stored.  Unsealed meats in freezer bags can last up to six months, whereas sealed meats can last up to two to three years.  Vacuum sealers are simple to use and affordable.  I have linked a highly recommended option to the left.  Give it a try!       


Meat Storage Tips



Organization

Properly organizing your meats is super important for not only your convenience but your safety as well. Improperly stored meat can lead to cross contamination and thus food born illnesses. This is something you want to avoid at all costs.


  • Rule 1: If meat is removed from it’s original packaging, you must place it into a container (freezer bag or plastic wear) that seals it securely enough to lock out the air. 


  • Rule 2: If you are storing different types of meats it is important that you adhere to a specific stowing order for safety reasons. For instance, raw chicken and turkey should always go on the bottom shelf. This is because they carry a higher likelihood of cross contaminating other meats that are cooked at lower temperatures. As a rule of thumb meats should be stored in the following order: whole fish, whole cuts of beef or pork, fish and ground meats, ground and whole poultry.         



Temperature

To safely store meat for the long-term temperatures should be between 28°F and 32°F. Rapid bacteria growth sets in at temperatures of 50°F and above. 



Storage Window

It is important to store meat as soon as possible, and definitely prior to the “use by date”. This will make a huge difference in the quality of the meat once you decide to eat it. Once frozen the meat will cease to decompose and will be safe to consume at a later time.

  • Conventional Method

    This method is simply adding meat to a freezer bag without vacuum sealing, then placing it inside of a freezer. It should be noted that meat can be frozen indefinitely and remain safe, the question becomes taste, aka quality.

     

    • Bacon:  1 month 
    • Beef (roast, steak):  1 year 
    • Cut Chicken & Turkey:  6 months 
    • Ground beef:  4 months 
    • Ground Turkey & Chicken:  4 months 
    • Ham:  2 months 
    • Lamb:  9 months 
    • Pork chops:  4 months 
    • Pork roast/loin:  8 months 
    • Pork:  4 months 
    • Sausage:  1 month 
    • Stew:  4 months 
    • Veal:  9 months 
    • Whole Chicken & turkey:  1 year 

  • Vacuum Sealed Method

    The quality of your freezer, where you live, and other factors related to your meats long-term home will determine the timeframe. 


    • Bacon:  2-3 months 
    • Beef (roast, steak):  2-3 years  
    • Cut Chicken & Turkey:  2 years 
    • Ground beef:  2-3 years  
    • Ground Turkey & Chicken:  2-3 years  
    • Ham:  2 years 
    • Lamb:  2 years 
    • Pork chops:  2 years 
    • Pork roast/loin:  2 years 
    • Pork:  2-3 years
